Gault Millau Toque Festival at the Tourism College’s gourmet workshop week
The students of the Tourism College had a special treat during their Gourmet Workshop Week. They had the unique opportunity to work with two of Austria’s very big star chefs, namely Harald Brunner from Das Spittelberg in Vienna (3 toques) and Richard Rauch from the Rauch siblings in Trautmannsdorf (4 toques).
Harald Brunner, together with FOOGOO, a new cooking video platform and the Austrian delicatessen Wojnar’s, held a workshop on Creative Cooking and digital food content, where students had the opportunity to let their creativity run wild in front of the camera.
Richard Rauch, who is a close cooperation partner of the tourism schools and has already inspired the tourism students several times in cooking workshops, prepared a top-class fish menu with a team of college and tourism students with highlights such as sea bass in a salt dough crust.
“For our students from the college, it is of course a great and unique opportunity to work with such star chefs as Richard Rauch and Harald Brunner. These are experiences that you don’t forget and are very inspiring, especially when you are at the beginning of your career and still need to build your network. We as a school are very happy to be able to offer our students such opportunities,” says headmaster Peter Kospach.
In addition to the culinary highlights, there was much more on offer during the gourmet workshop week:
Nicole Monsanto kicked things off with a workshop on guest relations and the future of hospitality, followed by a spirit tasting with the Kukmirn distillery. The next day, cooking teacher Christian Klapsch made doughnuts with the students and graduate Bernhard Sattler held a Riedel Glass Workshop to introduce the students to the fact that a good glass of wine depends not only on the wine but also on the glass.
